Rock Lobster

How to feed a hungry hubby in 10 minutes or less:

Combine 1/3 cup of mayo with the juice of half a lemon and a pinch of salt.
Add a heaping helping of chopped fresh tarragon and chervil.
Add one cup of chopped cooked lobster meat and toss gently.
Toast soft hot dog rolls in a pan with a little butter.
Spoon lobster salad into rolls and serve with chips and sliced tomatoes.

Dinner:  August 15, 2007

A simple sandwich never tasted so luxurious.

Luxurious indeed! I chuckled at the title though.. too bad the boyfriend does not enjoy lobster or I’d be trying this on his hungry days….err that and I’m allergic to shellfish.

god how i love lobster rolls. LOVE them. it was recommended to me to try stokes blushed tomato mayo. i picked some up and it really is outstanding… that looks so beautiful!!! now i am yearning………………..

Wow he’s so lucky to have a master chef wife like you! Did you grill those tomatoes? Even THEY look delicious!

Smerky – I bet this dressing would work well with poached chicken, too, so that might be something to try?

Claudia – I’m going to have to hunt that down.

Hillary – Thank you! I didn’t grill the tomatoes – just sliced ‘em and gave them a sprinkle of salt and some cracked pepper. They were sooooooo good.
