There can't be much time available for photo setups between cooking and eating! (sorry for the weirdness with comments - should be fixed now). To answer your question, Mike ate his sardines head, tail and all. I pulled the fillets off of the bones and at just the flesh and skin (though the tiny bones are edible, they're a bit poke-y for my taste), but I did eat one crispy fish head with Mike's encouragement.
